The campaign will start on the Ceratoria Peninsula (Ceratoria means horned in common).
Observing the political map, you can see the primary nations are: The Kingdoms of Galrenthia, Bonmany, Alisharidil (wood elves), and the dwarven city-state of Bormin-Tor.
If you were traveling about in one of the major cities of Galrenthia, you would first notice it is predominantly (88%+) human. The next race you will notice are dwarves (8-10%). Elves, gnomes, halflings are very rare. Any other race would be quite a unique event.
Firstly, there are no 'magic shops' on Ceratoria. It is rare to find a person who can perform magic, especially the arcane arts. People who do have access to such things keep them close to the vest.
Most 'people of the cloth' do not actually have the ability to cast divine spells. The ones who do are very likely to only cast 1st level spells. While some churches do supply holy water, obtaining anything else would be on the rare, but not unheard-of side.
In larger cities alchemist shops do exist that sell poisons, potions, and cures. Again, they are the exception not the norm.
All this being said, this is not necessarily a 'low magic' world. There are some few peoples who possess magical items and abilities... they either hide it or live outside polite society.
There are generally three levels to lore:
1. What commers or 'most people' believe. This is COMMON LORE
2. What 'educated' people believe. This might be clerics, wizards, nobles, etc. HIGH LORE
3. What is actually true. TRUE LORE
So, if the DM says something is true, it might actually be partially true, it is just what people believe.
