
As a professional fantasy cartographer who focuses on a mix of Earth Science and fantasy, I'm in a great position to offer some tips on describing landscapes that sound interesting, believable, and dynamic.
Even if you never show anyone, draw out a scene where the landscape is important. If you have a character hiding along a rock ridge looking into a valley, make a crude drawing of what that looks like. This helps you better understand what your character is looking at and what would be in their way, in their field of vision, and what you might want to emphasize. Such as, you might be tempted to describe the lush gardens just over the wall of the village in the valley but why would your character care about them? If they are more worried about being caught, they'll care more about hiding spots, shadows, and access through the wall.
However, if your character is enjoying the beautiful valley before them, describing the lush garden makes sense but what else is around them? What is beyond the village? What mountains obscure the sunset/sunrise? Can they even see that far? Drawing out the space will help you focus on what's important to the character and what to convey to the reader.
